The origins of the pineapple upside down cake goes back hundreds of years, when people would cook on cast-iron skillets over open fires. When they wanted dessert, they would line the bottom of the pans with fruit, and pour batter on top. When the cake was ready, they flip the pan over, revealing the beautiful pattern of caramelized fruit on the top.

It’s a moist vanilla cake, sweetened, and baked over a scrumptious layer of pineapple, butter, and brown sugar. When the cake is inverted onto a plate, the pineapple layer ends up on top gorgeous and delicious.

Well, in this recipe, we’re taking that same idea and applying it to cheesecake! Pineapple

Should you use canned pineapples or fresh pineapples or upside-down pineapple Cheesecake?

Fresh ingredients are always best, but sometimes the fruits are not in season. Using canned pineapple is much easier, the extra step of peeling the pineapple and making the hole in the middle fr the cherries is just not necessary, canned pineapples work just fine (that’s what we did!!). We used dole-sliced pineapples.

Why does my pineapple upside-down cake stick?

When it cools in the pan, the sugar-fruit mixture will hardens and sticks. Be sure to let the cake cool for 5 minutes. Then run a small spatula around the side to loosen it up. Then put a serving plate upside-down on top of the cake pan

Storage tips

Be sure to the keep the cake at room temperature for about two hours before you refrigerate it.  And to store, it just covers and keeps the cake in the refrigerator for 4-5 days.

As believers in Jesus we will be judged first, then the unbelievers and if any of us are found with our hearts not right before Him then there is a greater punishment, because we know the truth yet we chose not to obey. Whoever’s heart is found right with the Lord will make it into the new kingdom of Jesus Christ that he is currently preparing for all those who love him and keep his commandments.

Who does the will of the Father? If we as believers in Him are scarcely saved what will happen to those that don’t believe? To those who refused to accept Jesus in their hearts? It’s our job to preach the Gospel and save as many people as we possibly can while we are alive.

Let others know of your wonderful Savior whom loves us and died for us so whosoever calls upon him can be saved. We all have done wrong in this world. None of us are perfect but God is and God has condemned the world to fire.

Jesus covers all the wickedness that we have done in the past and forgives us once we love Him and keep his commandments. As belivers we have to change from darkness to light. Cheesecake

  • * 16 ounces of cream cheese at room temperature
  • * ⅔ cup granulated white sugar
  • * pinch of salt
  • * 2 large eggs
  • * ⅓ cup heavy whipping cream
  • * 1 teaspoon vanilla extract

Gram Cracker Crumbs

  • * 1 ½ cups finely ground graham cracker crumbs
  • * ⅓ cup white sugar
  • * 7 tablespoons butter melted
  • * ½ teaspoon ground cinnamon optional
  • Pineapple Upside-Down Cake Topping
  • * 1/2 cup unsalted butter melted
  • * 1/2 cup brown sugar
  • * 7 slices of canned or fresh pineapple rings
  • * 7 maraschino cherries

Pineapple Upside-Down Cake Batter

  • * 3 1/3 cup all-purpose flour sifted
  • * 1 teaspoon baking powder
  • * 1/2 teaspoon baking soda
  • * 1 tsp cinnamon powder
  • * 1/2 tsp nutmeg
  • * 1 teaspoon salt
  • * 1 cup unsalted butter melted
  • * 1 1/2 cup brown sugar
  • * 1/2 cup granulated sugar or powdered sugar
  • * 3 eggs
  • * 1 cup buttermilk
  • * 1/2 cup of Vegetable Oil
  • * 1/4 cup pineapple juice
  • * 2 Tablespoon vanilla bean paste or extract

  • * Move the oven racks to the middle and lowest positions. Place a large roasting pan on the lowest rack.

  • * Preheat the oven to 325 degrees F 162.7 C

  • * Place a kettle of water on the stove to boil.

  • * Spray a 9-inch springform pan with cooking spray and line the bottom of the pan with parchment paper. Next, wrap the bottom of the springform pan in two layers of foil that cover the bottom and go up the sides of the pan. The foil will prevent the water from the water bath from seeping into the pan.

MAKE THE CHEESECAKE LAYER

  • * In the bowl of a stand mixer, or a large bowl using a handheld mixer, add the cream cheese to the bowl. Beat the cream cheese until smooth and creamy.

  • * Add the sugar and salt and mix for 2 minutes, scraping down the sides of the bowl as needed.

  • * Add the eggs and mix until combined.

  • * Next, add whipping cream, and vanilla. Mix until the mixture is smooth and combined.

  • * Pour the batter into the prepared springform pan. And smooth the batter into an even layer.

  • * Place the springform pan in the foil pan that’s in the preheated oven. Carefully pour the water from the kettle into the foil pan or roasting pan so that 1 inch of water surrounds the springform pan’s sides.

  • * Bake for 45 minutes, or until the cheesecake is firm to the touch and not jiggly.

  • * Remove the cheesecake from the foil pan and set it on a wire rack to cool for 1-2 hours.

  • * Once cooled, move the cheesecake (still in the springform pan) to the freezer to freeze until frozen solid, about 2-3 hours or overnight.

Pineapple Upside-Down Cake Instructions

  • * Start with the topping by dividing the melted butter equally between two 9-inch cake pans. Sprinkle 1/2 Cup of the brown sugar into each pan. Arrange the pineapple slices and cherries and, set them aside.

  • * Preparing and baking the cake: Preheat the oven to 350 degrees. In a large bowl, add the sifted flour, baking powder, baking soda, nutmeg, cinnamon, and salt, and whisk to combine.

  • * In a medium-sized bowl, add the melted butter, brown sugar, and granulated sugar. Whisk to combine, getting all the brown sugar lumps broken up. Whisk in the eggs, buttermilk, pineapple juice, yellow food coloring, and vanilla until combined.

  • * Add the wet mixture to the dry mixtures and mix until combined, with no dry spots or lumps.

  • * Evenly divide the batter between the two pans, about 2/3 of the way full, do not overfill! (one of the batters will be poured on the gram cracker crumb and the other on the pineapple topping)

  • * Line oven with foil or two cookie sheets, cakes may bubble over some. Bake for 48-53 minutes, covering loosely with foil at the 20-minute mark to avoid burning. Cakes are down when a toothpick inserted in the middle comes out clean.

  • * Place cakes on a wired rack to cool for 10 minutes.

Pineapple Upside-Down Cake Assembly

  • * Place a gram cracker cake layer on your cake plate or platter.

  • * Remove the cheesecake from the freezer. Release the springform’s sides from the pan.

  • * Remove the cheesecake from the bottom pan by sliding a knife under the parchment. Peel the parchment from the bottom of the cheesecake.

  • * See how the size of the cheesecake layer compares to the pineapple cake layers. If the cheesecake layer is larger, shave off some of its exterior to get it to the same size as the pineapple upside-down cake layers.

  • * Place the cheesecake layer on top of the gram cracker pineapple cake layer that’s on the cake plate. Then top with the upside-down pineapple cake.
