Starbucks Sous Vide Egg Bites in the Instant Pot

Starbucks makes their egg bites in a sous vide machine, but most people don’t have one – myself included!

But no worries! If you have a pressure cooker or an Instant Pot, you can easily use sous vide function. You will just need a silicone egg bites mold. #ad This silicone egg bites mold fits a 5, 6, and 8-qt Instant Pot.

Set up your Instant Pot or pressure cooker by pouring 1 cup of water inside the bowl and then put the rack/trivet inside. Next place the silicone mold filled with the egg bites batter on top. Make sure to cover the mold with aluminum foil and lock the lid. Press the STEAM or SOUS VIDE function for 10 minutes. It may take about 5 minutes or so for the pressure to build and the function to start working.

After the 10 minutes are up, let the pressure release naturally for 10 minutes before removing the egg bites.

If you are using this method to cook our egg bites, it will take about 30 minutes from start to end this recipe (5 minutes prep, 5 minutes to build pressure, 10 minutes to cook, and 10 minutes to release natural pressure).

Well, sous vide means “under vacuum” in French. This cooking method consists of vacuum-sealing foods and then cooking them immersed in water at a very precise and consistent temperature. One of the benefits of the sous vide technique is it doesn’t require extra fats or oils and the food comes out perfectly cooked.

How to Make Easy Egg Bites in the Oven

I find this baking or oven method much simpler.

  1. Preheat oven to 300 °F (148° C). Grease very well a standard 12-cup muffin tin with cooking spray and reserve.
  2. Meanwhile, blend the whole eggs or only the egg whites with cheese, cream cheese, and seasonings in the blender until frothy. SEE PIC. 1
  3. Pour mixture into the greased muffin tin and place your add-ins such as cooked bacon bites and spinach, or roasted red pepper and basil. SEE PIC. 2
  4. Place muffin tin into a large roasting pan with boiling water coming halfway up. Bake the whole egg mixture for about 30 minutes but the egg white mixture for about 20-25 minutes (SEE PIC. 3). They are ready when egg bites are just set and have a custard-like texture.
  5. Let pan cool on a rack for 3 minutes (SEE PIC. 4) , run a knife around the edges to loosen them, and gently remove the bites. You may use a spoon or invert them over a platter (SEE PIC. 5). Don’t wait much longer than 3 minutes or they may become difficult to remove.
  6. Serve while hot.

Egg and Cheese Ratio

 You can make egg bites either dense or light and airy. But whatever texture you choose, they should be custardy. For  this reason they need to cook gently either in a bain-marie or using the sous vide method. Note: don’t overcook them! 

The texture will depend on the egg to cheese ratio. The more cheese you use, the denser they will become. It is crucial that you use cheeses that can blend and melt well such as the ones mentioned below. Mozzarella is not one of them by the way: when blended, it becomes gritty. 

Once cooked, our egg bites will puff up in the oven and then will deflate a little once they start to cool down. I use a ratio of ¼ cup of one of the cheeses of choice such as gruyere, swiss, or cheddar, and ¼ cup of cream cheese or cottage cheese for every 5-6 eggs or egg whites.

The ones made with whole eggs will be smooth and custardy and require a little more time to cook in the oven. In contrast, the egg bites made with egg whites will have a lighter texture and will cook about 5 minutes faster.

In addition, to make 6 egg bites you will need about 5 whole egg or 6 egg whites.
