CRACKING OPTIONS

We offer 2 options for custom cracking your pecans.

Crack Only.

After sanitizing your pecans, we run them through the cracker and you get back everything; then you finish shelling and picking them while watching your favorite TV show. Cost is 50 Cents per in shell pound.

Crack, Shell & Blow.

After sanitizing your pecans, we run them through the cracker, the sheller then under a machine that pulls most of the shell away from the meat. This is what most folks prefer, since it removes about 90% of the shell, leaving you with the remainder to pick by hand. But don’t expect the output to look like packaged grocery store halves; besides the 10% of the shells, you’ll also get the broken pecans bits and pieces. Cost is 80 cents per in shell pound.

Percentage Returned.

When you bring in pecans, we weigh them for pricing. When you pick up, they are obviously going to weigh less, since much of the shell is removed. For paper shell pecans, expect around 40-50% of the original weight to be returned. For the smaller natives, expect about 30-40% of the weight returned.

PREPARATION FOR CRACKING

We are very proud of our shelling plant. We have purchased the finest cracker and sheller made. Pecans come out of the machines with a large percentage of halves, but the percentage of halves you receive depends on the condition of the pecans that we receive. Here are some things to pay attention to before you bring your pecans to us for cracking.

Make sure they are dry.

To test for dryness, crack a couple of pecans by hand and then snap the meat halves in two. If they snap crisply, you’re ready to go. If they bend or crumble, they’re still too green for the machines to crack properly. To dry pecans, spread them out in a warm place and let the sun do the work.

Sort by size.

Our machines are set to crack by the nut size (small, medium and large) and mixed sizes will get mixed results. We will size them for you at the price of 10 cents per pound.

Clean pecans.

No dirt clods, rocks, sticks, screw drivers, pliers, eyeglass lens, paper, snuff cans, church keys or tractor bolts; thank you. And pick out the pecans still in hulls. All too hard on our machinery.

AFTER CRACKING

Quality.

We make no guarantee on the yield of any customer’s pecans, or the percentage of halves or pieces they will receive after shelling. Quality of pecans differ and the yield of each individual’s pecans may vary accordingly. Pecans are an agricultural product and may be harmed by temperature, humidity, odors or other environmental elements.

Pickup Promptly.

Once pecans are shelled, the oil starts to evaporate. Get them into storage promptly to preserve the flavor. They will stay fresh in the fridge for six months, up to a year in the freezer. Please don’t forget to pick up. We dispose of unwanted pecans after 30 days.

The good news is that Bonnie and I have welcomed a foster baby into our home. He is a precious, energetic, 7 month old boy named Isaac.

The bad news is that he requires so much of our attention and time, we will not be opening the pecan shop this year.

Our price to process pecans is $1.45 per pound. However, if your pecans have rocks, sticks or pecans with the hulls still attached, we will have to increase the price per pound because it is extremely time consuming to remove those items and slows down our entire pipeline of work.

The $1.45/pound price includes first doing a thorough rinse of the pecans and then boiling them for 6 minutes to sanitize. After that process, they go onto special drying tables where they quickly dry. Then we put them through our cracker, nut meat extractor, and blower. Lastly, we package your pecans in lined heavy duty brown paper bags or lined boxes, depending on the size of your order.
